Radish and Avocado Slaw/Salad

This recipe can be used as a topping for tacos or served as a side dish

Ingredients

  • 1 bunch Radishes
  • 1 small Lime
  • 1 small Red Onion
  • 1 handful Fresh Cilantro
  • 1 tsp Spice (Chili Powder, Cumin, or Paprika) (or more if desired)
  • 1 pinch Salt
  • 1 ripe Avocado

Instructions

  • Cut any tops or bottoms off the radishes. Scrub well. Dice into matchstick style pieces for slaw or thinly slice for a salad. Place into a medium sized bowl.

  • Slice the lime in half and squeeze the juice from both halves over the radishes. (Tip: Roll the room-temperature lime on the counter first before juicing to extract more juice.)

  • Dice the small red onion. Add to bowl.

  • Chop the handful of cilantro. Add to bowl

  • Add 1 tsp of the spice received and stir into the chopped vegetables. (Can add more if desired.)

  • Shortly before serving, cut, pit and slice the ripe avocado into small cubes. Add to bowl.

  • Add a pinch of salt to taste and gently fold all ingredients together and serve immediately.
